Healthy Hawker Food?? Really?


I was asked to do a presentation on this topic yesterday to a company. Actually it’s not an easy topic to cover – Healthy Hawker Food – personally I do not think it exists.

Hawker food actually originated from the street hawkers serving ready to eat food to the ‘coolies’ or labourers from the ‘old economy’. The dock workers, warehouse labourers, boat men; hence you’ll find that most of these hawkers began their trade along the river or wharfs.

The food was high in carbohydrates and fat, strong tasting and was prepared quickly. Hence they were either fried or flash boiled, served with oils or seasoning.

They were fine and actually quite appropriate for the workers then – the hard bodies needed the fat and quick energy from the carbohydrates to lift, pull and push the loaded bags and crates.

But eating these foods today may not be a good idea. Face it we’re mostly working with computers and in the office, sheltered from the sun and the only pushing done is with a pen. All that fat and carbohydrate goes into storage as body fat – with little or no hope of ever being used.

So is it surprising that you are fat?


No matter how you choose, it’s a challenge. How does one avoid the salt and fat in Hawker food? Most hawkers especially the ones in the Central Business District, will not accede to any request to cut the oils or the salt as they have to prepare the food in bulk for the sake of speed and profit.

The Food Pyramid – how it came about.

A census was done in the USA in the early 70’s. What it revealed was alarming – that more than 22% of Americans were obese. Logically it was thought, the only reason was that the American diet consisted of high fat and if that was reduced, then America could become a slim, healthy nation again.

Low fat gurus, and aerobics divas in leotards started to spring up together with their low fat diet program. America was on a warpath again and this time they were damn sure that they would win (after having to pull out of Vietnam around that time as well).

The Surgeon General (or the equivalent of the HSA) introduced the magic Food Pyramid – the panacea to its obesity woes – Complex carbohydrates forming the base – the highly recommended food group, followed by fruits and vegetables, then the proteins and lastly the least recommended, fats.

Products like margarine and non-diary creamer were touted as ‘healthy’ alternatives to the high fat stuff like butter and milk. They were included in everything - from cereals to ice-cream.

The marketing was swift and furious with almost every country adopting it. Even till today the Food Pyramid is taught in our schools and nutritionists still swear by it.

Hurray! We can now enjoy our food like our pastries and breads and pasta loaded with artificially made fats (trans fats) and we’ll still be slim. Or at least that was what the manufacturers wanted us to believe – and for a long time we did.

Ironically in that almost 40 years of adopting the Food Pyramid and a high Carbohydrate/ low fat diet as the best was to stay healthy, the percentage of fat Americans have more than doubled the 1970 figures! Today more than 50% of Americans are obese or heading that way.


We in Singapore have dutifully adopted much of the American diets - convenient, quick, processed stuff that's full of very little actually.

It’s time for change…again.

How do you prevent fatigue and depression?

Eat well balanced nutritious foods (see 35 year old Chicken Rice and sea salt anyone?)

Do Aerobic exercises – 3 to 5 times a week (see Aerobic and Anaerobic). Exercise releases endorphins, which is our body’s natural feel good drug. Studies have shown that it is as potent and addictive as any other artificial or illegal drug. It helps create a good addiction – to exercise.

One thing I’ve found is that I tend to be more cautious about my food and I control my alcohol intake the moment I began exercising and saw the results. So it has multiple effects.

Take a broad spectrum, nutritional supplement,

Spend time in the sun

Vitamin D is necessary for the body to produce Calcium, for our bones and helps us relax. Sun exposure will also help alleviate depression. The Swedes for example are given 3 months vacation in summer, to go spend time in the sun.

Sleep and Rest
At least 7 hours; as our bodies need time for to complete the repair process. Even the machines in the office need down time for servicing and repair and that’s what sleep is. Sleep depravation increases blood pressure and (as new research seem to indicate) even diabetes.

Reduce Mental Stress

Focus on a hobby or read a good book or listen to healing music. Meditate or do something that allows you to be in your own space away from your work, spouse and children. Learn to be in the present. Check out Steven Halpern’s music. It’s extremely soothing and will help you relax.

Increase your self esteem
Learn to accept and love yourself. Join a gym to get fit and feel good. Pamper yourself by rewarding yourself with a good massage or spa treatment every month. Buy a new dress or tie, get a good haircut. Do something that you’ve always wanted to do but never got down to doing. Feel the pleasure of and joy being yourself or finding yourself again.

Minimize watching or listening to the daily news; it’s full of same bad news and advertisements that seem to imply you’re bald, fat and ugly, need credit, bigger breast and a firmer butt.

One caution about spending however – Budget and use cash. Leave your Credit Cards at home. Depressed people can go overboard giving themselves ‘retail therapy’ sometimes and end up in greater depression when the banks come a-calling at the end of the month.

Fatigue and Depression

Stress is a natural occurrence that actually keeps us alive.

At the onset of stress our body immediately releases adrenaline, for ‘flight or fight’ reflexes, and switches our body from burning fat to leaching the ready but limited supply of glycogen in our muscles.

This allows us to be extremely alert, full of energy to defend our lives (or lives of our children) and not feel pain long enough either to win the fight or get to a safe distance before we feel the pain from our injuries.

You’ve probably heard of women and mothers who are able to lift cars many times their weight to free their trapped children; the result of adrenaline and glycogen.

After a certain time the body releases another set of chemicals (serotonin, endorphins and anti-oxidants) to help the body ‘calm down’ and recover – stress creates free radical that damage our cells.

But prolonged stress (work, spousal and financial challenges) leaves no room for our body to recover. To make things worse it creates a vicious cycle that ultimately leads to fatigue and depression and inadvertently, mental and physical diseases.

How do you know that you’re depressed?

Well see if you suffer from a series of these, then you probably are:



  • Mood Swings

  • Weight gain – Excessive appetite

  • Weight loss or anorexia

  • Unexplained exhaustion

  • Lack of physical and mental energy

  • Agitation

  • Excessive sensitivity to rejection

  • Insomnia
  • Daytime sleepiness or grogginess

What’s Aerobic and what’s Anaerobic?

There are basically 2 sources of energy that the body utilises.

Under normal circumstances your body will burn fat. In fact that is what the body prefers to do – burn fat. Fat takes a longer time to covert into usable energy for the body. It provides prolonged, sustainable and clean energy, coming from the liver and the fat cells in our body. It’s also less stressful for the body.

If you are exercising somewhat hard, where you can speak 5 words – My name is Vasu Dev – before having you gasp for air again, then you’re probably exercising at an aerobic rate. Your heart is beating between 60% and 70% of your maximum heart rate and your body is using oxygen to burn fat for energy.

Under stressful circumstances however, the body requires instant energy. For example, when you are being pursued by a lion. You need instant energy to get away from the threat. The body will shut down the fat burning process and use the glycogen (stored sugar) in your muscles. It shifts to what’s called an anaerobic rate. Your heart is beating between 80% and 100% of your maximum heart rate and does not use oxygen.

In this state, the body shuts down the fat burning process. It converts glycogen into energy and produces, as a by-product, lactic acid, which creates the painful ‘burn’ in muscles. So when you’re running real hard, and are panting like mad, YOU ARE NOT BURNING FAT and NOT USING OXYGEN! You are stressing your body and producing lots painful lactic acid and a lot more free radicals in the process. Result – no immediate fat loss and free radical damage.

Getting Started

Yes, how do you start on an exercise program without feeling overwhelmed with the ‘what to’ and ‘how to’?

Let’s assume you want to lose weight. So here’s what you can do.

Begin an aerobic program.
Exercise at a pace that makes you work at a somewhat hard rate but not until you are panting, producing painful lactic acid and 3 minutes away from a heart attack.

Do the following 3 to 4 times a week at an aerobic rate:
1. Start with brisk walking or jogging (not running, yet) ideally on a treadmill where you can monitor your heart rate, your pace and the difficulty factor
2. For 20 to 25 minutes
3. You could near the end of the session exercise slightly harder and push your heart rate into the anaerobic range, but jus for a minute or so.
4. Cool down and end the session with light stretches.


Go Aerobic, and you’ll end up looking real good and feeling real great in a real short time.

NOTE:
Err... please do not give yourself the excuse to eat any more than what you normally eat, just because you exercised.

Why lose weight?

Well yeah, there’s lots of stuff that’ll run thru your mind with this one. How fast can I lose these kilos, for how long will I have to sacrifice my favourite lontong, mee siam or char kuay teow; “You mean I’ll have to exercise? Really?”

Well here’s the low down.

If you’re losing weight for cosmetic sake alone, forget it. You’ll put it all back on after that party. I suspect you know what I mean.

You buy this beautiful, slinky, black dress for next week’s dinner and dance, one size smaller. Then you starve yourself for the week so that you’ll fit into the dress, just in time for the party.

Note: if you’re a guy you may want to get the biggest dress size. All that beer will cause your waistline to expand during the party.

If you’ve done this before, you’d probably have also experienced putting all the weight back on – and MORE.

If you can understand the health benefits of losing weight, you’ll have a better chance of keeping it off. And the sacrifices you make by way of your food and life style change will be worth your efforts.

And the benefits of long term weight loss??

Lifelong HEALTH! – Errrr HALO!

Longevity. Being able to see your sons or daughters get married and holding your grand child in your arms! If that’s not as important, then think about being able to live long enough to cash out your CPF and actually touching the cash, finally!

Freedom. Being able to enjoy something as basic as strolling along the beach with a loved one or playing golf – without labouring under all that weight. The last thing the next flight needs is someone clutching his chest and rolling around on the 9th hole.

Make sure that your doctor would only be able to afford to drive a Geely. You’ll not have pay hefty hospital bills or pop handfuls of expensive medicine daily to control your blood pressure or blood sugar.

Look and feel great. The fitter you are the better you carry yourself, the greater your self esteem – you’ll even look more attractive to your spouse.

You smell better too really.
I know that it’s a mean thing, to say but the fatter you are the greater the chance for bacteria to have a party and multiply in the many folds of your skin.

Ensure that you get that promotion at work. Studies have shown that to a great extent, employers tend to associate fitness with being able to handle greater responsibilities – hence the promotion.

Lower life insurance premiums. If the insurance companies charge you more for being overweight don’t be mad or feel offended. It’s your fault in the first place.

Better Sex. Hey all your plumbing will be in good working order anyway, so might as well make good use of it, right?


35 year old Chicken Rice Anyone?

I had a realisation this morning when my mum asked, “Why did you buy sea salt; isn’t the salt I’ve been using, from the sea?”
That’s when I realised that we’ve slowly been going through a transformation in our diets, without realising it. And it’s a transformation from a nutritious diet to one that’s practically starving us from vitamins and minerals. What do I mean?

Take the Chicken Rice you ate for lunch. Is it the same chicken rice it was 35 years ago? “Of course not,” you’ll say. “I’ll get sick eating 35 year old chicken rice!”

That’s not what I mean. Does it contain the same amount of nutrients found in a plate of chicken rice 30 years ago? Sadly, it does not.

Rice 35 years ago was probably not processed. I remember helping my mum pick tiny weevil larvae and weevils themselves from uncooked rice, before she coked the rice. This does not happen today. You can be sure of this because nothing living is present in white rice nowadays.

Why? Because the rice has been processed!

Every nutrition bearing and life supporting rice germ has been removed form the rice so that it does not easily rot, increasing shelf-life and hence profits. As a result the rice today consists of very little nutrition and lots of high glycemic, diabetes causing starch. It is so devoid of any nutrition that even the weevil avoids it!

And the chicken?

It’s not the free range chicken that the chicken farmers use to rear 35 years ago. Those take at least 4 months to reach maturity. In that time the chicken would have built immunity against diseases, absorbed all the good nutrition from the grains and the worms it feeds on and had enough space to run around in to produce lean, healthy and nutritious meat.

The chicken we eat today, (yes the $2.50 ones) takes 21 days to grow to maturity. They’re fed processed foods packed with antibiotics to ward off diseases and other artificial additives to make them gain weight to look big and fat. They are kept in crammed conditions with hardly any freedom of movement. And all to increase the profits of, not the farmers, but of the large ‘franchisors’ who own these farms.

21 days is hardly enough time for the bird to absorb nutrients or build immunity against diseases. So when a disease strikes (which probably was caused by the low natural immunity of the birds, and the antibiotics becoming less and less effective against newer strains), whole farms are culled.

The cucumber’s probably genetically modified with an animal gene to confuse the bugs and weevils that would otherwise invade it. Hence even the cucumber may not really be a vegetable nowadays.

So you see how we’ve slowly been going thru a nutritional transformation without realising it? And we’re getting a bad deal from it; low nutritional value, genetically modified, antibiotic filled, high glycemic index…stuff.

It’s ironical really that at a time where food seems to be in abundance, we are actually starving ourselves from a lack of good nutritious food.

Trans Fats – Killer Fats

So are we still concerned about this fat or have we simply forgotten about it? Actually the newspapers should carry a daily reminder of the dangers this fat poses.

What is it?
Trans fat is actually an artificial, man made fat. It was created about a 100 years ago specifically for to raise the profits of the food manufacturing companies.

It is made by superheating healthy oils to temperatures of 270 degree Celsius. And then in the present of a nickel catalyst, hydrogen is passed thru the heated oil to create a semi-hard tasteless, highly stable fat that could:

a. Replace the more expensive butter and other healthier fats in processed foods
b. Increase the shelf-life of processed food so that there’ll be lesser spoilage and hence, higher profits for the food companies.

How do you spot them?
That's easy - take a trip to the nearest 7Eleven - you can bet that almost every snack item there contains Trans Fat. Check your food labels. Any items that contain hydrogenated or partially hydrogenated oils have trans fats in them. They are also contained in margarines and shortenings used in the manufacture of foods like, cookies, breads, cakes, instant noodles, non dairy creamer, 3-in-1 beverages, TV dinners, in fast foods…the list goes on really.

In a test done, it was discovered that one piece of KFC fried chicken contains 7g of trans fat!

Why is it a health hazard?
Unlike natural fats (monounsaturated, polyunsaturated and saturated fats), our bodies do not know how to process trans fats. As a result the fat gets deposited in our liver, fat cells and arteries. There is now evidence that trans fats are major contributors to increasing obesity, heart disease and even diabetes.

There’re studies showing evidence that high intake of trans fat increases the risk of breast cancer in women, by ^40%! (^Cancer Epidemiology, Biomarkers & Prevention September 1997 Issue)

It’s been shown to increase LDL or our ‘bad’ cholesterol and DECREASE the HDL or the ‘good’ cholesterol, in our blood. That’s like having a hammer fall on your head, followed by a huge piano!

The sad thing is that we in Singapore are still pretty ignorant about this fat. Our hawker centers boast of ‘The Healthier Choice’ yet our hawkers are using vegetable (partially hydrogenated) cooking oils. You will be better off consuming lard instead; the actual healthier choice. And we continue to gobble our cookies, french fries and afternoon coffee flavoured buns without a care in the world for our health.

Oh ya; actually we cannot really be blamed for it. How can we when even doctors are still advising us to eat margarine instead of butter (if you have to take butter at all). And we continue to trust the ‘Healthy Heart Pyramid’ found on the packaging of some ‘health’ foods.

Regarding trans fats – we should insist on ‘Zero tolerance’ really. And only then will the food companies comply.

*McDonald’s fries (171g) in Denmark for example contain only 1.0% trans fat as compared to 28% in South Africa. Why? Denmark has very strict laws pertaining to trans fats. (*source: New England Journal of Medicine Vol 354; Apr 2006)

Presentation at Pioneer - Teach Your Child Health

I had a great experience at the presentation at Pioneer today. The topic was “Teach your Child Health” and we had an enthusiastic group.

It was established at the start that none of the parents there would deliberately hurt their children. Some however may innocently be doing so in their food choices for their child.

The key point to remember is that parents themselves have to set the example – the child simply mirrors the parent. Eat healthy, and the child follows.

From the faces of some of the participants, I could tell that they were wondering - “How to make healthy choices. After all, we are working parents you know.” And I can sympathize with you if you are in that predicament as well.

But what if you could prepare almost all the weeks’ meals during the weekend; would that help? Here’s one very healthy way of cooking, called BAGGING.

How to create the BAG
Pull out a length of foil about 70cm long. Fold it in half so that it’s about 35cm. Fold that into half (so that it’s about 17cm). Now fold in 2 edges (twice, to form a good seal so that there’s no seepage) to form a bag, with one edge unsealed.

How to cook a great fish dish
Choose a good fish like Salmon or Cod although any white fish would do. To marinade the fish, rub it with chopped garlic, salt or soy sauce and a dash of freshly squeezed lemon juice; place it all into the bag. If you like you could add some sliced mushrooms, spring onions and asparagus.

Seal the remaining edge of the bag. It should end up looking like a silver pillow. Label it a store it in your fridge preferably in the chiller. (The great thing about this is that you can plan and prepare many meals, in advance.) If you have to freeze it, remember to take it out of the freezer for thawing way before the cooking time.

At cooking time (after a hard days work) take it out of the fridge and pop it into the oven at 280 degree Celsius. In 25 minutes you’ll have a very healthy meal. It’s cooked via convection and there’s no washing up as you can dispose of the bag after that, and the kitchen remains clean.

Your family’s meal will be packed with good fish protein, low salt (as you can control the salt), Omega 3, nutrients from the garlic and other ingredients; low in saturated fats and no transfats.

All in 25 minutes!

So how do you begin?

Well the first thing about beginning, after you decide, is to start thinking of your goal.
Is your goal to:

• Lose weight
• Gain mass
• Maintain your weight yet reduce the fat
• Look good for the opposite sex (the goal that’s most prone to failure in the long run)
• Improve Health and lower the risk of disease

This is crucial as it would give you clarity and you’d then be able to choose the food, nutritional supplements and activities that will support your goal. You’ll also be able to join the relevant clubs or interest groups with the same goal as yourself.

So if you want to lose weight in a healthy manner (and the only healthy manner is by exercising and changing what you eat), your goal will help ensure that you do not join a group of body builders but a group of walkers or joggers instead.

Next then is to make a financial commitment in some way. You could, find a personal trainer, buy a book on getting fit, buy a good pair of running shoes, join a gym and if you’re like me, go to a sports shop like B.I.R.D or ADIDAS and buy the correct equipment. And if as a result you look good wearing the equipment, it’s an added bonus. :o)

Face it; you need all the emotional support and mental visualisation to stay on this life changing journey. If you do not think it’s OK to wear what you go to bed in, to work, why would you think it’s OK to wear what you go to sleep in when exercising?

Start appreciating the value and benefits of having proper attire and equipment. They’re designed to give you the proper support and cushioning for the appropriate sport, to prevent injury and long term bodily damage. Besides, they’ll also boost your confidence level and put you into a correct frame of mind.

So if you’re taking up tennis, invest in a good pair of tennis shoes; and do not wear them for jogging. Invest in a pair of jogging shoes instead.

Wearing any pair of shorts to run can be painful and utterly uncomfortable experience. One, it’ll chaff your inner thighs and you’ll develop a John Wayne walk almost automatically. Two, they may not allow certain ‘crucial’ parts of your anatomy to breathe creating a damp environment in your nether regions.

So set your goal and choose the correct activity and equipment to support your goal. It’ll put you on the first path to lifelong health.

Clever Fakes and Cleverer Fakers

Cardboard filled buns, silicone filled eggs, heavy metals in fake prescription drugs; it seems that the Chinese are the kings when it comes to commercially prepared fake food and drugs.

You’re shocked. You’re disgusted. You imagine the all health problems that could befall you if you were one of those who had consumed those disgusting buns. Yeah, you’re right; you could fall terribly ill eating cardboard (which also contains chlorine as a bleaching agent) and silicone eggs.

But how sure are you that your lunch today did not contain the very chemicals found in those fake buns and eggs?

If you had a serving of French Fries today consider this. How is it that the cut, uncooked potatoes in a fast food joint can remain all white and fresh looking; whilst the potato you peel at home quickly turns brown and ultimately black?

Have you ever considered the fact that they’ve been bleached!? (Read ‘Releasing Fat’ by Dr. Ray Strand)

And what about the burgers you eat at the many burger restaurants?

Well first, they have to all be of the same size and weight (being a franchise and all). Real meat shrinks when cooked and each will shrink differently. Franchised meats however have almost uniform shrinkage. Why?

They’re PROCESSED, that’s why.

So what’s involved in the processing process, you ask?

First the meat chosen is not of the best cut. In fact it consists of everything including the ears, offal, ligaments, cartilage; EVERYTHING.

Then every semblance of life within the meat is killed off. Both good and bad bacteria are killed. The aim is to extend the shelf life as the meat is now unable to decompose. If you’re a CSI fan you’ll understand. The flies will no longer lay their eggs in the meat as it no longer contains the nutrients needed for even the maggots.

Processed meat is tasteless and contains almost no nutrients; its dead remember? So now the clever franchise brings in a ‘food doctor’. He or she’s the person who is responsible for creating the flavours that will restore flavour to the meat. That means adding chemicals to the meat to give it some semblance of the flavour of beef or chicken or fish.

It’s then presented as the real stuff. You eat it and think it’s the real stuff. But it stuffed with preservatives, salt, flavouring, trans fats (again to preserve shelf life). You think you’re getting great value for money.


Yeah the Chinese are guilty and that’s because they’ve not mastered the art of hiding all the harmful stuff. When it comes to fakes, check out the American ‘food giants’. They are the real masters – the Cleverer Fakers.

Health's a Decision

So now we’ve created the context – HEALTH. As ironic as it seems, many people I’ve spoken to people about health and the need to stay healthy seem to have arguments and excuses. Why it’s not possible for them to choose health.

“No time, too much work, tired, my kids, my wife, my husband, life’s short, just eat”; you’re probably thinking up a few good ones right now. Do send them to me for my reference ya.

Like many other important things in life, Health is a decision. Before you embark on any program, make a decision. And for some, back that decision up with a reason..a WHY.

Why do you want to stay healthy? The answer seems obvious enough. My reason was to attract health and avert disease. Yours could perhaps be so that you can spend the years watching your young child row up.

Make a decision first.

In today’s world, the odds are stacked against you from birth. Babies are fed processed foods, packed with enhancers and preservatives. Then its processed foods like hamburgers, french fries, processed rice, cereals, snacks and sugared drinks like Coke. The list goes on…

It’s an uphill climb to health, with the giant corporations pumping obscene sums of marketing dollars to brainwash you into thinking that the piece of bread holding the highly processed, preservative and trans fat laden meat, is actually made from the freshest of grains and packed with wholesome goodness.

In a meal consisting of white rice, fried chicken and a can of Coke, you could be consuming as much as 17 teaspoons of sugar, and 12 grams to 18grams of saturated and trans fat. And that’s in ONE meal!

Do this over a period of 30 years and one day you’ll begin to feel fatigued; where you’ll be too tired to even enjoy precious moments with your spouse or your young child. Lethargy and even depression sets in. Family life and work suffers. It becomes more and more difficult to focus on your tasks. You go to see a doctor. He does a blood and a glucose tolerance test. “You’re diabetic,” he tells you.

You know what? You made that decision.

The choice is yours.

My First Posting – My Objective


First Let me say..WELL COME!

Yes after all this is what this blog is all about…WELLNESS. My Objective is simple - To educate as many people as possible on how to prevent the onset of disease and slow down the ageing process.

You see my father’s a diabetic; and I refuse to become one. Almost every health provider says that Diabetes is genetic. Well I tend to disagree. Just because I’m South Asian does not make me a candidate automatically.

What’s worse is that such generalisation will be the bane of many, as those traditionally not prone to diabetes, may be lulled into complacency. Guess what? Singapore is the 6th leading country in the world suffering from diabetes with 1 in 10 of us being diabetic. And there could be another huge sector – the lulled ones – who are pre-diabetic.

This blog aims to educate you and help you and your loved ones really understand this disease, learn to avoid it through an unavoidable life style change and ultimately beat the disease.

I’ll provide you with links and additional information, new research and even 'controversial' ones - rather ones that are only now deing discovered and has yet to make its way into coventtional medicine - to help you understand this disease and realise the pandemic we are facing. I’ll give you the figures to the human cost in the near future.
